Mexican Seasoned Chicken

1 whole chicken
2 packages taco seasoning mix
1/4 cup water

Rinse chicken in cool water. In a crock pot, empty 1 package of taco seasoning mix on the bottom. Pour in the 1/4 cup water. Place the rinsed chicken, breast side up, in the crock pot. Sprinkle the remaining package of taco seasoning over the chicken. Cook on low 6-8 hours. Remove chicken and pull the meat off the bone. Discard bones and skin. Shred the meat and return to the crock pot. You now have meat for tacos, enchiladas or burritos. Refrigerate until ready to use. Keeps for about a week.

6-8 Boneless, skinless chicken breasts may be substituted. They can even be placed in the crock pot frozen. If fresh, cook approximately 4 hours on low, frozen cook 4-6 hours.
